Pound Cake

A pound cake is one of the most basic and versatile desserts one can make. Eaten by itself is fantastic. Topped with ice cream and chocolate syrup is a special treat. And if you want to kick it up a notch, add fresh fruit in season. Peaches and strawberries are at the top of my list.

Now over the years we have tried many versions of the pound cake. Hey, we even have the recipe that was Elvis’s favorite. No kidding. It is pretty good, but not as good as the one below. All you have to do is try it once and you will be a believer.

Ingredients

  •  2 cups of sugar
  • ½ lb of margarine, do not use butter, Land of Lakes is a good brand, do not use ‘lite’.
  • (use at room temperature)
  • 6 large eggs, room temperature.
  • 8 oz cream cheese, room temperature.
  • 2 cups all purpose flour.
  • 1 tsp almond flavor (optional)

Directions

 Put all ingredients in one mixing bowl (sugar, margarine, eggs and cream cheese) and beat well. Add flavoring, then add flour and mix well. Grease 10 inch tube pan and bake at 350 degrees for one hour or until done. Sprinkle with powdered sugar when cool.
