Ingredients:
- 1 dozen eggs
- 1/4 cup Wasabi Mayonnaise
- 1/4 cup finely chopped cilantro
- 1/4 cup minced Maui onion
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- black caviar and 3" pieces of fresh cut chives for garnish

Cook 1 dozen eggs, let cool, cut in half.
Mix egg yolks with 1/4 cup Wasabi Mayonnaise (from Trader Joe's), 1/4 cup finely chopped cilantro, 1/4 cup minced Maui onion, 2 tablespoons fresh lemon juice and 1 teaspoon lemon zest.
Blend well either with a hand mixer or bowl mixer (Kitchenaid type). Either scoop into egg whites or into a pastry bag with a large flute tip to pipe into egg whites.
Top with a small amount of black caviar and a 3" piece of fresh cut chive standing up like a flag.
Optional: Sprinkle lightly with paprika for color.
